Hey guys and girls!

My Creation

My mom, sisters, and I always go to Sprouts literally 3 times a week. Anyway, I was getting bored at the checkout line, and I saw a magazine called 30 Best Pumpkin Recipes in the Fall…then I saw pumpkin cookies.

Immediately, I thought of those perfect sugar cookies with like 2 pounds of sugar in them.

I thought, what if I made pumpkin cookies that are really crispy but have only a tablespoon of maple syrup? Turns out it worked!

My Life

Today my sister is going to a skate country event for our home school group.

I have decided not to go because I like doing stuff with my mama more. Mama and I are going to maybe shop and get some sort of special lunch! I am so excited, and a plus is my wig is coming! FYI my wig is part of my costume for Halloween.

Pumpkin Cookies

Ingredients

  • 5 Tbsp oat flour
  • 1 Tbsp maple syrup
  • 1/4 tsp pumpkin pie spice
  • 1/8 tsp cinnamon
  • 1 Tbsp pumpkin puree
  • Dash salt
  • 1 Tbsp grapeseed oil

Instructions

  • Combine all ingredients in a bowl.
  • Take 1 tablespoon of dough and put on pan with parchment paper.
  • Bake at 350 until crispy!
  • Serve and enjoy!
